Makings:
4 tablespoons of olive oil
1 onion into strips
200g chopped green beans
1 carrot, chopped
Salt, black pepper and chopped basil to taste
6 eggs
4 tablespoons of wheat flour
1 teaspoon of baking powder
1 cup of shredded mozzarella or colonial cheese
Olive oil for greasing
Preparation mode:
Heat a frying pan with the olive oil over medium heat and fry the onion until golden brown. Stir in green beans, carrots, salt, pepper and sauté for 3 minutes. Turn off and let cool. In a blender, beat the eggs until doubled in volume. Add flour, baking powder and whisk to mix. Transfer to a bowl and stir in the cheese, cold stir-fry, salt, and basil. Pour into a greased medium ovenproof dish and bake in a preheated medium oven for 20 minutes or until set and golden brown. Let it cool and serve.
