Coconut fit pudding with red fruit syrup!

Pudding Ingredients:

2 envelopes unflavored gelatin powder
500 ml skimmed milk
200 g whipping cream
200 ml coconut milk
100 g dried coconut
5 tbsp xylitol

Syrup ingredients:

1 cup berries
1/2 cup coconut sugar
1/2 cup water

Staging Mode:

Hydrate the gelatin according to the manufacturer's specifications.
In a blender, place the milk, heavy cream, coconut milk, dried coconut, xylitol, and hydrated gelatin.
Beat very well until you get a homogeneous cream.
Distribute into individual pans and set aside in the fridge for at least 2 hours.
Meanwhile, for the syrup, put the berries, sugar and water in a saucepan.
Cook until the sugar melts and the syrup thickens. Let cool.
When it's time to serve, unmold the pudding and pour the syrup over the top. Enjoy your meal.
